Euclid's elements was extremely insightful. Reading the founding texts for a field is very eye opening.
Plato is the default go to.
Start with the Greeks is not just a meme, it all does start from the Greeks. Science is the Greek word for knowledge.

If you want more modern stuff I can recommend:
Nietzsche, Friedrich The Gay Science (put this on your desk for fun conversations)
Kahneman, Daniel Thinking, Fast and Slow
Sawyer, W.W. Mathematician's Delight
Raymond, Eric S. The Cathedral and the Bazaar
Hofstadter, Douglas Gödel, Escher, Bach
