My gf did the Strasbourg engineering physics master, and everyone on the campus brags about how it's the oldest physics uni in France and how this master is so elite and all but it was complete bullshit and they just skimmed over a ton of subjects.
What really matter is how productive the particular institute you're in is AT THE MOMENT. This can change very fast based on who's in charge. How tight are the permanent researchers with the industrial world, do they have actives parterneships? Do the professors have some side businesses they made with their patents? This kind of things is how you'll do something meaningful and find a position.
Things have changed so much after the 2008 crisis. Businesses are looking for actual operational skills now, none of that "well you went through a prestigious cursus so that means you're smart/driven and that's good enough for us".
