Instead of focusing on taking different classes, try to look into very specific topics, what the prerequisites are, and then find what textbooks have information about that, watch YouTube videos of lectures, do example problems, etc. Much more efficient use of time, imo.
One notable exception is I highly recommend the cs50 online course. Cs50 is an absolutely phenomenal course. It is difficult but you will learn a lot, and the assignments are very memorable and interesting.
