I'm specifically looking for the protocols for blood tests like for specific nutrient and biochemicals.

Lab protocol varies significantly with the kind of lab work you're doing, there is no handbook that covers it all. You'd need to look for specific stuff. And even then it varies by the institution (but they are mostly similar)
For example here is the WHO lab protocol for handling specimens suspected of containing avian influenza A virus: https://www.who.int/influenza/resources/documents/guidelines_handling_specimens/en/
which I found by googling "influenza lab safety protocol"

The specimen tab tells you how it's collected/processed, the Performance tab tells you how the assay is done, and the Clinical & Interpretative tab tells you about the test in general.
