When the sun is shining on the green house temps will rise quickly, so much so that you will also want to include some form of temperature regulated vents in the roof or side walls. They sell pneumatic actuators that can be tweaked to engage at certain temperatures and fixed to your windows.
You can use large water barrels in the center of your green house as a thermal mass, or large concrete blocks. I haven't seen it personally but if rammed earth construction is something you are also looking into, I bet you could include a large rammed earth block that doubles as a potting bench/work table in the center of your green house as a temperature regulating thermal mass as well.
