It's called the ricochet sound. It's an actual common sound but maybe you've only heard it in cowboy movies before.

When a bullet ricochets and makes that noise it has bounced off of a hard surface, distorting the round bullet into a flattened, jagged shape. As it is still rotating from the rifling, the jagged, irregular edges make that noise.
