Because linear equations are fairly easy to solve. Non-linear equations are more difficult.

If you want a much more interesting equation, that you can wrap your heads around, look at 2d Euler equations.
$u_t + u u_x + v u_y + p_x = 0$
$v_t + u v_x + v v_y + p_y =0$
$u_x + v_y =0$
Use a stream function to solve for the divergence condition
$u = -f_y(x,y,t)$
$v = f_x(x,y,t)$
Then analyze the prolonged system (first prolongation). It is much more interesting geometrically.
