For example, we can call a transistor that's on vs off "one bit" of information and we can call a coin that's heads up or tails up the same "bit" of information, then we pre-define what these bits will correspond to, and then we manipulate them in order to make sense of some computation. But in both cases, the actual physical reality of the system are entirely different, there is objectively no connection between them. There is no actual "bit" or "information" whatsoever, there is only the actual physical arrangment of the system. WE make up and use the "information" for a pre defined ruleset that we also made up.
"turing machines" aren't real. "computation" isn't real. These are human abstractions to simplify physical systems that are otherwise far too complex to talk about with more accurate models.
The only thing in this universe that behaves like a carbon atom, is a carbon atom. This can not be replaced by anything other than another carbon atom. Neural nets aren't real, as another example.
