I've read that the mRNA vaccines for Sars-Cov-2 were developed in just two days after the virus was sequenced.
Does this open up the possibility for other viruses having mRNA vaccines developed quickly? HIV? Herpes?

The problem with HIV/herpes is your immune system doesn't fight it effectively even after it's had the time to develop antibodies. Herpes because it gets into nerve cells which the immune system is supposed to leave alone, HIV because it gets into immune cells that should be destroying it.
It would work for ordinary viruses like flu that your immune system does ultimately defeat after you get it.
