Why are supercellular tornadoes more common over land than water?

Why is it that supercellular tornadoes are more likely to form over dry land? Is there some geographical reason?

One very likely possibility is that there's just more people over land to see them. Tornadoes don't always form with supercells so we can't simply track supercells to count how many tornadoes there are we absolutely need eyes on the ground to see them. This is why storm chasers are so well paid, they're not just thrill seekers we need to inform local authorities that a tornado is seen on the ground and to track them. This is getting even better now that citizens all carry digital cameras connected to the internet with their smart phones.

There could be dozens more or dozens less water spouts on the ocean and we'd never know it because that's not where our focus lies.

Water spouts. And they're more common than tornadoes.

Gigantic supercells dont happen over water much cause there isnt enough of a temperature difference

You want dry air to create a cap to prevent moist air from rising
Think of it like a boiling pot. You’re letting all your CAPE go without a lid over the pot. In the case of supercells, you want that moist air to build up as much as you can as the air heats up diurnally. Enough to blow off that lid and use all that CAPE up rapidly. That’s also why supercells tend to have tornados later in the day.
