I definitely don't know all the stuff in those textbooks, I barely even read them since I learned what was necessary from my lectures and the books are more than what was necessary.
That said, you really only need a broad overview, with the ability to go back and look at something in detail when necessary, so really just read the books to understand concepts.
You could make notes if you want, but the approach I would take is to read a chapter, then draw a mind map, then reread the chapter and see if you need to update the mind map.
The good thing about alberts (and kandel iirc) is that they include a reference section at the end of chapters. You could read some of these papers to test your understanding
