Random mutation/adaptation occurs
It's either successful (as measured by the ability to survive and reproduce, passing on it's genes) or it doesn't (in which case into the bin it goes).
This occurs over thousands/millions/billions of years.

Just study evolution if you are actually interested. You need to learn the mathematical models and examples in biology. Then it will make a lot more sense.
