what exactly is the point of knot theory? If I started making strange knots, braids or links out of wires and then ran enough current through them that the wires were moving each other would anything interesting happen or would it just be a waste of time

Well, it is thanks to knot theory that I now know the most efficient way of tying up my shoes. Saves me about a second every day. That's like 365 seconds a year which is about 6 minutes. As someone who appreciates saving any amount of time, this is big.

for the most part when I look at knot theory I see a form of topology that's less abstract that most other topology. You can easily make a knot or a link out of any kind of string. the question is: would it make a difference if something (for example a circuit) was a knot instead of a simple loop? wires just seemed like a place where knots might matter

In my master thesis I worked on connecting parts of a quantum conouter (or several in a distributed setting) with spin chains. It worked pretty nicely, but using knot theory I could prove that most networks (I don't remember the exact threshold) that permit perfect quantum state transfer cannot be built physically.

Low-dimensional topologists use them. Every closed, orientable 3-manifold can be obtained via Dehn surgery on the 3-sphere, and any two such presentations of 3-manifolds can be shown to be homeomorphic/diffeomorphic via Kirby calculus on the associated knots. I don't know anything about knot theory but most of the time applications for these obscure fields of math only show up 100 years after the math had been developed. Years from now there will be some very complex problem that someone will realize is comparable to knots and we will already have all the math we need to solve it.
