If the theory that says that men are on average more interested in things and systems and women in people and emotions is true, then why do some fields like chemistry and biology have a near 50/50 split?

Biology should be self evident. Think about it some more and then ask again if you don't get it.
The most common theory I've seen for chemistry is that it has a much higher emphasis on rote memorization than other STEM fields. Part of this theory is that women are better at rote memorization than men or at least close to being equal. I haven't bothered to look for any studies that support this but they might exist.
