If I were to ferment specific bacteria species, would I be able to do so with almond milk and table sugar?

I have fermented mutaflor using this method and it worked and helped with my IBS.

I'm trying to ferment other species like strains of lactobacillus, bifidobacterium, streptococcus etc.

Do some strains of gut bacteria not ferment in sugars?

Would changing it to lactose or glucose have a different effect?
