If some bug or animal ate something, or acted in some way that killed it, how would it pass that "knowledge" to the rest of its species?
Wouldn't we have these things constantly killing themselves the same way?

insects are incredibly basic automatons that function off of extreme instinctual rigor. they can afford to use the "do this or fucking die" strat because they have hundreds of babies at a time, and mate potentially dozens of times a year. they can afford to straight up brute force their survival; the insects that reproduce once a year or less got there because they hit a successful niche, will immediately go extinct if that niche is damaged, and will be immediately replaced by a different insect in like 100-200 years.

how do you know that some aspect on the cellular level isn't keeping tabs on anything? they've shown in experiments that even a single-celled organism can learn to respond to stimuli.

Stimuli response on a cellular level is incredibly well-studied. All it is is differential gene expression caused by signalling cascades in response to the stimuli. Just because the mechanisms and genes exist to respond to many types of stimuli doesn't mean the organism "knows" how to respond to it, it simply responds, because at that level the line between "conscious decision" and "chemical reaction" is non-existent. It doesn't take much of a leap of logic to apply this to a larger, multi-cellular organism scale.
