In the context of the double-slit experiment, what exactly does "observe" mean? How do they "observe" the particle traveling through the slits? What precisely causes the particle to behave differently?

Something is totally off about quantum mechanics. I think that either the whole field of quantum mechanics is junk science, or there's mechanism behind quantum mechanics (the hidden variable) that we don't understand.

Observe means take a measurement. Also they do not observe the particle travelling through the slits, only when it hits the detector / screen afterwards. If you try and measure which slit the particle goes through you destroy the interference pattern because you have localised the particle to a specific location.

A measurement is of whatever property you are trying to take. Momentum, position etc.

The standard double slit experiment has a detector behind the slits that shows where the particle hits (position)
