I think I'm being dumb. My question is: You can solve a first order differential equation for v, or you can solve a second order differential equation for x. What's the difference? I have a specific air-resistance problem that I'm trying to work through, so I'm going to go watch a video on that.

yeah you just answered it yourself. if you solve for v(t) you still haven't found x(t).

Also you should eliminate c in your first equation since you've differentiated your second one to obtain the first
