Seeing how retarded the other students in my university are I'd say it would be easy for someone to become more skilled than them by self study. I don't think however that anyone would give a shit unless you manage to somehow prove your skills.

Bachelors yes, but unlikely. Masters VERY unlikely. Still possible but at this point you should just get a degree, because syllabus and teaching notes are very important.

Easiest, anything that is not exact in nature and is based on opinion: social sciences, phil, sociology, anthro, lib arts etc. Hardest, anything STEM. Impossibly hard would be the fields where lab work and hands-on training is necessary. E.g. medicine, EE.

no they offer profs (who are experts), labs, well developed courses. You must choose a good uni tho
