Humans can constantly exert themselves and regulate their homeostasis without taking breaks. For example, if I was to chase after a literal cheetah, I would catch it. Humans can constantly regulate their temperature without intervention through sweating. Most animals have to in some way pause activity to reduce their temperature, such as trhough panting, finding cool areas (mud), etc... Humans can also do things like walk and drink, throw things, and are just generally far more efficient due to an increased intelligence.
Considering all these factors, horses dont apply because it isnt about strength or even simple physical stamina but an overarching endurance in the literal sense of enduring throughout exertion without issue in the achieval of goals, and considering we are speaking of the arising of the human form, these goals can be most easily understood in the context of a hunt.
