What degrees will increase job opportunities and what degrees are going to waste my time? I’m interested in physics and literature, both of which I’ve heard have no jobs.

do a degree that you think you will be successful at. if you do something that you don't want to do, you're going to be middle-of-the-road and your career prospects will be even worse

Any degree will have "npc" people. Realize that like 85% of scientists to have ever been alive are alive today.
If you put something on a pedestal you'll just be disappointed, you'll find a smart autist in whatever subject you pick. And just a bsc is enough for entry level jobs, just pick what you want.
