Energy is just an abstraction of the movement of particles. It is a spatial dimension. Potential energy is just the potential for movement to be expressed. To say energy can be removed is like saying you can remove the x axis.

I mean, I'd love for someone to give me a clear explanation of why that makes sense, but isn't it easier to just accept that energy can probably change into other stuff and then change back rather than claiming that there's all this potential energy that just hangs around unobservably until it begins moving things?

The whole point of the energy concept is that when you add up all the different kinds of energy, the total can't change. Sure, you could define energy more narrowly and say it can change into other stuff, but then you'd need a word for energy plus all the stuff energy can change into. What would be the point of that?

you just don't understand potential energy of a moving object. an object moving faster than a different object has a different time flow, objectively. when two objects of different speed collide, their speeds average based on their mass, and their rates of flow of time also average. when you are changing the speed of an object, or the position of an object, and adding "potential" energy, that is where the energy is going to; speed of time flow.
