Help me understand energy

Retard here, I understand physics modeled as forces but I can't wrap my head around energy. First law of thermodynamics says that energy cannot be created or destroyed, simple enough. Energy by this law is a very absolute thing. However potential energy is relative, we can assign something whatever bull shit potential energy value we want because in a process, only the diffrence in final and initial energy is what matters. So how can arbitrary potential energy be real in a world where energy is supposed to be finite? How can we measure energy if kinetic (real) energy can just be converted to something arbitrary... but back again to something genuine in existence?
