How important is engineering title

I graduated as a mechanical engineer in 2018 in America, but I'm currently in a country in the Caribbean the past couple of years, mainly for family reasons and partly for covid right now.
I only recently got a job, but it is as a procurement associate at a paint sector at a large conglomerate. I feel like I get a lot of experience here, things are hectic, but it does help me learn a lot of about obtaining materials for the company.

But i got a call the other day for a ojt (on the job training) program that I applied for a year ago. It's basically a government run internship agency, and they gave me the position of mechanical engineer assistant at the ministry of agriculture.
They want me to start on Monday which is really... not good, will basically burn my bridges here.

It's been a big crisis since yesterday evening when I told my job about it. I have till evening today to decide if I'm staying or not. They gave me a lot of advice, but of course they really want me to stay in the role so it's a bit biased...

If my ultimate goal is to get a mechE job back home in the US should I stay or should I leave?
The title of mechanical engineer assistant will look better than my current title on my resume, but there are other details to take into account I suppose.
