They had no recipe for logic to figure out what was true or not. Instead they had to just make up logic as they go along or ad hoc, and I don't know if you've noticed, but humans can be surprisingly illogical at even at the best of times.
The scientific method is just logic written down, in the form of a procedure that you follow as if you were following a cook book recipe. Maybe it' not perfect, but that's only because nothing ever truly is, but it's the best we got.
You're welcome to criticize it, but try to do so without using and showing a superior form of logic, then you're only pointing out or advertising your own flawed/faulty logic.
