How can you find water on a planet by looking with a telescope? Has science went too far?

By only observing the light reflected off a celestial object, they can know the material composition in the atmosphere, its water content, temperature of atmosphere, everything about its core, what molecules are present, etc

Seriously, has anyone ever asked themselves how can we know so much with only a light?
