Why do people always treat the observable universe as all that there is? Light from simply hasn't reached us yet so the universe could be infinite for all we know right?

It doesn't matter because we will never be able to see or detect what's out there. The observable universe is all there is for all intents and purposes. It's all we will ever see. Assuming there's more is just imagination and fantasy.
The number of stars and objects we can see is actually going down with expansion. The universe is "shrinking" and expanding at the same time.

multiverse theory was never proven to begin with and it's really just a fairytail which makes for good storytelling. However since the universe is probably infinite, everything that can logically exist probably does.

Yes it does. Given an infinite universe and anything that has even an impossibly small chance of existing does exist somewehre. Hard to wrap ones head around, but an infinite universe means infinite earths, the possibility of stumbling over one is practically 0 though

Think about it, if we dont see it, doesnt affect us and regarding the speed of cosmic inflation will never reach us in infinite amount of time, why should we consider it more important than "we know there coud be more out there"?
What lies beyond out the observable universe is only interesting for astro scientists.

I find this view too pragmatic. The inference is no different than those made about the past that are of comparable likelihood: It has consequences, even if some those are only to perception. Likewise there are plenty of other things there is nothing to be done about, knowledge of which we do no characterize as "fantasy" simply because of our lack of omnipotence or omniscience.
