Taylor series question

So from what I understand, taylor series can approximate a point on a function close to an already known point. You can use this to determine the overall shape of a function. My issue is, the definition of a taylor series requries that you know the function so you can take its derivatives. If you already know the function, why do you need to even use a taylor series? This never crossed my mind when I learned about it years ago.
