Latitude is simple to find by only using only the stars but for longitude you need an accurate clock and astronomical tables.

You should read about John Harrison and the longitude problem. It's a fascinating story.

Latitude is very easy to find in the northern hemisphere. You find the angle between the ground and the north star, and that's it. You can do this with any star, but it's especially easy with the north star because it falls right on the north pole, so there's no correction necessary. Using other stars will require that you know the angle of latitude that they are located at.
