It would be pointless, because without electronics you wouldn't be able to send information back to Earth, and that's the entire point of sending robots.

OK - if someone can make a proof-of-concept machine, able to make various meaurements and send them back to Earth without a single elctronic component, without being extremely overcomplicated and thus fragile - I will believe it.

Not sure about space exploration (electronics are well studied and communication between electronics is even more well studied), but analog computing is a niche yet interesting topic where you can really realize extending things we study in complexity and computer science to physical problem. I believe people realized a model of general computation using PDEs, and in particular, Tao wrote a paper about Navier-Stokes alluding to using fluid mechanics to achieve arbitrary computation.
