I've heard how covid can permanently affect your lungs, but how likely is that? Because the only bits of evidence I've seen supporting it are anecdotes.

It's too new and the data is too dirty to really know. Like most things related to COVID19, so far it looks like these negative outcomes are mostly happening to those who are already weak in various ways.

There was prelimunary study done in China in february I think which showed that like 75% of those recovered had some sort of lung difficulties for at least a few months but those preliminary studies are not yo be trusted because China has no standards.
