I have heard people say stuff like quantum physics, Einstein's relativity theory etc. aren't real and that it's basically all bullshit. What evidence is there to support his claim? Is it just a stupid conspiracy theory?

It's because all the theories are untestable,
The evidence is that once you go looking you won't find any.
No one ever does because they assume someone obviously must have checked, but no one actually did.
A perfect example is how people j7st say "twin slit experiment"
And that's the evidence lol.
Like saying "twin slit experiment" out loud is some kind of spell to make something real.
The twin slit experiment was done in 1770 by Thomas young and it showed light was always a wave.
No one ever did a twin slit experiment with individuals photons because they didn't have the technology in the early 1900s so the experiments were all thought experiments dreamt up by scientists.
Thats what Heeisenbergs uncertaintainty principal is actually about.
Observing individual photons is impossible without changing them.
It's an impossible experiment.
Schrodingers cat also shows a quantum paradox.
It's impossible to have a cat be both alive and dead.
But no one understands quantum mechanics , they just pretend.
The Bognadof controversy is proof of this.
Light is always a wave, it propagates as ripples or perturbations through background cosmic rays, Einstein didn't know about this medium when he wrote his paper, also the photoelectric effect had only just been discovered and the experimentation was very crude.
There were competing theories but the Nobel prize people picked Einstein's. It was human error on there part.
The reason these inconsistencies were never discovered was because all planet earths phycisists were recruited to make the atomic bomb and quantum physics was abandoned for a few decades.
Then reembraced as fact once the war was over and the original scientists had all retired or died.
Also the Vatican runs a quantum research lab and uses QM as a way to prove the existence of God
Hence the God particle.
And the Vatican has more away in the scientific world than we like to admit.
QM is metaphysics like religion.
It's basically a cult.

you could try arguing that the catholic church compiled the bible so it could have been altered to its liking (and theres some really weird shit like Mandela effect besides the usual visible alterations in many parts of the bible), but that doesn't entirely holds true according to my observations of reality (see previous posts)

There is nothing mystic about quantum mechanics. It has strict rules based on mathematical axioms/theorems (example the continuity and differentiability of the wave equation being the cause of Tunneling).

That said, many great physicists of the "old era" were religious and their knowledge didnt doubt (in some cases seemed to strengthen) their belief in god.
