Is it possible that we all have different interpretations of reality? Just as different phones receive the same exact unicode for emojis but display them in different ways, could this be similar for human brains?

You have to define 'reality', and also 'interpretation', and also 'different'. But in general, yes, in the sense that not everyone shares the exact same genetic/phenomenological conditions that lead to their worldview, again, whatever that means.
