She is correct if you look at it from the perspective of the scientific method. You cannot know something 100% (there a microscopic chance of anything being wrong) therefor you can not prove anything either. But on the other hand it is quite easy to find reason to find proof that disproves something. So scientific theories like Einsteins "relativity" and Darwins "evolution" are basically just theories that has been less disprove then other theories. If you then say, not all proof is equal in quality then you can go down the path of reading up on critical thinking and understanding statistics. But to try to prove something is not useless on the other hand. It can be quite useful to find a good "hypothesis" ("A proposed explanation for a phenomenon"). But when you have found one or more of them, try to disproves your own "hypothesis" and see for yourself which one seems more likely after trying to disprove them.
