There's two standard on the difficulty of fields; first is how it deals about more abstract and fundamental things via rigorous logic as the fundamental way. The other is how much it has many empirical shits to memorize, but it also has some logical structures (not much rigorous).

So I think math & theoretical physics is top by the first standard, medicine or biology related stuff is top by the second standard.

Been living with three girls who studied medicine while I was a math chad.
Theirs is mostly memorization, at times I could help one with homework by recalling what another one had told me over dinner.

You can't group all the biology stuff together. Some of it is business level difficulty, some is engineering level difficulty. Lots of brainlets are bio majors, but I've also met some really intelligent people. It probably has the widest intelligence spread and difficulty of any STEM major. Most engineering disciplines are, on average, more difficult than bio related things. Comp sci is up there as well. Chemistry is relatively easy.

*Just* math and *just* physics on top is more a cultural bias because people associate these subjects with rigor, but the reality is that, especially across research, you'll find this rigor in anywhere from engineering to network systems. The former features a lot of measure theory when working with beamforming and communication, and the latter deals with topology when you're talking about asynchronous computability. They do not sacrifice any semblance of abstraction despite being seemingly down-to-earth from an undergrad's perspective.

The math taught, even through proof classes in late undergrad, still deal with canonical and well defined structures that you're just exploring. Functionally, there's less memorization, but you're still working with well established structures, just as the chemistry major works with well established structure in pchem. It isn't until grad school and classes there that you mess with actually doing the intangible, abstract, and seldom-explored - at which point, the chemistry major does the same, albeit different methodology.

This idea that pure math, or at least proof math as you see in undergrad, is anything at all abstract or intangible is masturbatory and self congratulatory at best. You approach that with maybe compactness in topology (not even the baby-compactness in the reals). Even in algebra, groups are taught alongside geometric examples, until you hit rings and Galois theory in undergrad.

This is bullshit. I just finished two degrees in Physics and Neurobio with Math and BME minors, so I've taken a fair amount of higher level math and chem classes. They are not at all on the same level, math is much more difficult and much more abstract. The expectations professors have for students in 400 level math classes are also much higher. I'm not denying that most math you see in undergrad isn't really all that abstract or intangible compared to what comes after, but it's already more than most doctoral level chemists are comfortable with.
