I've seen pictures from the internet of professor offices and some of them have like 2-3 copies of the same book(s) on their shelves.

So they can loan it out to students or TAs if the material is covered in one of their classes.
Or they're hoarding it on the chance that they need to the above.

Americans really do this? In Europe you go to the school library for a book, your lecturers aren't going to give you any books unless it's their course notes.
