Mathematical Ecology or Structural Biology, going off the narrow-minded list you've given.

CMol, you're going to need to go to grad school and to make good connections while there. Focusing on genetic engineering would be the best way to max future earnings. Again, you need to be talented and to network properly.

I'm a grad student in cell biology, and I think we have a great mixture of art and science with the amount of microscopy we do. Really it depends on where in each of the fields you go.

Academia or industry? Academia wise, plant biotech/cell bio/microbio/radiobio have the most funding, ecology/marine bio has far less funding in comparison.
Plant biotech is super-employable as giant companies that work on agriculture/crop related stuff are always funding the fuck out of plant studies.
