So if WiFi suffers from interference why don't they just make a visible light WiFi receiver with data rate so high that a single dropped packet is irrelevant?

Visual light can’t penetrate very well through walls and we can see it. Also can suffer interference ie your lights in your ceilings that blast over a huge frequency range. You can still do it though of course IR remotes work despite there being lots of interference they just use I think a 20k carrier frequency but there is still lots of interference and very directional your table to black it.
