How does a vape that's using 1 18650 produce 75W of power.
18650s are rated at about 20w to 30w so were does the rest of that wattage come from.

They can have caps inside that store power and release it at 80 watts. If it is truely 80watts which it is probably not.

That's the watts it is rated to output, but that doesn't mean it can't output more if its forced to. It will just drain the life/capacity of the battery faster.

Batteries usually have a watt-hours rating, that's how many watts per hour they can do. If you are only using it for a few seconds it can produce more watts over less time (but the total energy use is the same as a lower watts over longer time)

Yes, they consume more than the battery is rated. That's why it's dangerous to hold down the button or use chink models. Those things are battery explosion grand central. However, I'd rather die from a battery explosion and have my skin melt and get infected rather than die of lung cancer.
