If all of our observations of the universe are reliant on our stimulus input system then how can we be 100% positive about anything?

You can't always be sure that your senses and judgement are reliable but it would be a pretty fucking boring and tedious world we would live in if we constantly considered this or used it as an argument against comprehensive theories. Everyone has fundamental axioms that they can't prove. I would rather invoke Occam's Razor than worry about whether I'm an alien tripping on 12 dimensional DMT or whether I'm a figment of some autist's hyperdetailed daydream. It leaves too many possibilities to be worth the mental effort.
