Some first year physics (e.g. pulley), pathology (pneumococcus diagnosis) and geology too. The very first thing we see him do in the show is synthesise gasoline. As such, chemistry seems likely, since it acts as an interface between physics and biology.
Nevertheless, I think he would go for aerospace engineering. The whole series comes down to going to space. He built small rockets as a kid, his dad was an astronaut etc.
Senku would probably just study every branch of science on his own (as he has his entire childhood) and only pick a major that grants him access to resources and hands-on experience he wouldn't otherwise have, so I'm betting on aerospace engineering.
