This has bothered me since I was a kid. Is it plausible for Emmett Brown to not be able to make gasoline (or a substitute) in the 1880s despite all of his genius?

If he had access to crude oil, he should have been able to. Gasoline is just alkane hydrocarbons (between 6 carbon and 9 carbon I believe) with small amounts of aromatic hydrocarbons like benzene added.

He could've just bought some, it was a commercially available product at the time due to it being a byproduct of kerosene manufacturing. Hell, the first gas pump was invented in the year the film was set, 1885.

The engine in the DeLorean was fuel injected. He never could have got it to run on ethanol with 1880s tools. If it was carburetored. Then it would have been possible. By drilling out the jets, advancing the timing, and upping compression. He also could have got a carburetored car to run on wood gas.

Yep, his only fuck up was not distilling the alcohol first. He poured in straight spirits, probably adulterated with gunpowder or some other meme shit alcoholics would add to their drinks to make it 'stronger'.
