why do we close our eyes to sleep, but none of the other 4 senses?

closing your eyes doesn't "turn off" your sight. you can still see light, and light will wake you up.

Our eyes take in the most data. Ears have maybe few bit rates. Skins is probably even less. Mouth is prob same as skin. Eyes probably have couple megabytes of data flowing. These are all per second rate. Its sorta like putting your computer to sleep. Your ethernet can still get signals. Your keyboard/mouse still transmits signals. But since its much less than graphics card and the cpu, the're considered irrelevant.

You actually do turn them off in a certain way. The biggest reason we close our eyes is to keep them moist as has been mentioned, but it's not like you can hear feel (small impulses of) smell or taste things during your sleep
