From a psychological standpoint, is religion just a cope for a mind unwilling/incapable to accept death and intrinsic randomness in the universe? Or does it serve an ulterior evolutionary purpose?

No, humans need to have belief in something. If you dont believe in a god then you just replaced it with worship of material things. For example, look at leftist who say they hate all faiths(mainly Christianity), they are the biggest blind consumers and will go apeshit if you say X movie/game/book is bad(because to them thats the same a burning a holy book in any religion). If they dont worship brands then they worship the state or certain people.

Science can predict some things about the universe, but not everything, so it doesn't prove the universe is completely deterministic.
