Because doing an experiment and/or doing research in the interest of science are very convenient rationalizations when it comes to pursuing your innate desire to torture and harm others. And in the end, it's only about these few things. Similarly to how people waste immense amount of time and wealth to create something of magnificence (a painting, a book etc.), not because they have any actual interest in creating something but simply to enhance their own social standing and increase chances of getting sex.

The job market for everything is shit. I'm molecular biology and I just got a job after 150 applications. The places that I work at have about an equal amount of bioinformatics positions as they do lab rat positions (my position). You can get a job, just be prepared to apply like it's a full time job for a bit. Or maybe you'll get lucky. Make sure your resume isn't shit though. I've heard back from some companies after I gave them some blatantly terrible cover letters, but resume always matters.
