Unironically is coffee safe to drink?
My boomer parents keep telling me it's going to destroy my kidneys but they also told me I should always drink soda with my meals or else I will have digestion problems.

What in the absolute fuck. The carbon you swallow can cause bloating if you don't belch it all up, soda is shit anyway, and it's a massive dose of sucrose.

No... I think what they mean is that you should consume something bitter before the meal (like wormwood) to stimulate bile production, and possibly take a swig of vinegar. Though if your stomach can't ramp up acid production to deal with a meal, either you're eating too much too quickly, you're eating junk, or you have other nerve issues.

A moderate amount of coffee (like less than 6 cups a day) isn't going to hurt you. It's likely beneficial. The only real downside is you can develop a dependence and get slight withdraws. If you're dehydrated coffee could exacerbate this issue.
Sugar is bad for you, especially as much as there is in soda. The carbonation can potentially cause issues with your bones, but it's not really a concern unless you're older.
Caffeine in drinks doesn't matter that much unless you have cardiac issues. It's not going to hurt your liver unless you literally drink gallons of it.

coffee is also slightly acidic but it doesn't have gas, i think caffeine makes your stomach produce more acid which is why people don't recommend it on an empty stomach.
coffee also has a shit ton of antioxidants, has vitamins and minerals, doesn't have sugar or fake sugar and has fiber if you don't filter it

Every time I've quit for longer than a week, the worst withdrawals are over within 3 or 4 days but i just feel sloe afterwards.
I've read threads on r/decaf where people say it'll take at minimum 2 weeks to feel normal again, and then way longer to feel functional

Distilled because municipal water has a measurable concenrration of various pharmaceuticals (not to mention the occasional source with lead).
Re-mineralized (do research and buy your own) so you keep a good balance of sodium and potassium in your body.
Glass/ceramic bottles because most plastics are synthesized using carcinogenic or endocrine-disrupting reactants. I can go into more detail about bottles if you like.

You can certainly fabricate your own distiller out of a pot, a funnel, and some copper pipe. But you're better off investing in an actual distiller with clad metal parts. No plastic or lacquered tubing.
