PRIME NUMBERS

So (2^82,589,933) ? 1 is the current largest known prime number. Why have the past few been 2^x MINUS ONE? I mean there's got to be some between the top two. Something like 2^x- y^z -a. Or even ending in PLUS ONE?
My main question is is MINUS ONE easier to calculate/prove or something?
