Are there any internships where I can just do math all day? Having to take all these slow lecture classes for my graduation requirement is really starting to get to me.

reach out to math professors and ask if you can do research remotely with them

well then I guess it depends what kind of work you want to be doing
you can have a "math" internship that involves just plugging numbers into an excel spreadsheet, and I'm sure many small companies would love to have you there at a low price. I assume you mean something that's more intensive
