Why is it so easy to read the emotions of dogs through their facial expressions, and why is it especially easy for labradors ? Shouldn't emotion reading be human-only ?

This. Dog co-evioluted with humans for many millenia and while cats had certain independence, dogs were always tightly controlled.

Its almost like dogs are a species created by the cohabitation with man and that we've adapted to communicating with dogs as much as they've adapted to communicating with us.
That being said I'd argue that cats have even easier to read body language.
