Organic Chemistry Long-Term Reactions Question

No.12002343 ViewReplyOriginalReport
Theoretical Question: A scientist leaves a mason jar full of olive oil and ammonium carbonate heated at 50C for 10 years. The olive oil contains the elements C, H, O, and the ammonium carbonate is used to add a reactive nitrogen source.

10 years later he opens the jar and dips his finger into it and tastes a drop.
> What happens to him - is he safe?
> Have any tasty aromatic compounds formed
> Have any psychoactive drugs formed in the jar
>Have any potently toxic compounds formed in the jar
>Does the jar mostly consist of random fats and oils and nothing too exciting, sort of like crude oil with a petrol smell
Attached pic is some wine estimated to be 1650 years old.
